Black Bean and Corn Chowder

This delicious soup packs sweet and spice and everything cozy that we want to end the first beautiful day with. Happy Fall everyone from my Monday to yours.


  1. 3 cans black beans
  2. 1 can corn
  3. 1 jar medium spice salsa (I used Trader Joes)
  4. 1 jar black bean and corn salsa (I used Trader Joes)
  5. 2 medium-sized tomatoes
  6. 2 cloves garlic
  7. 1 1/2 tsp cumin
  8. 1 tsp cinnamon
  9. 3 tbsp honey
  10. 1/4 avocado per serving
  11. 2 slices of bacon per serving
  12. a few handfuls of cilantro

Servings: 4-6 depending on how hungry you are ūüôā

Something you should know about me is I LOVE spice and flavor, I tend to be VERY generous with herbs and spices so feel free to tone it down a bit.


Combine cans of black beans, corn, and salsa; rinse the cans out with water to loosen leftover beans to add to the pot. Try not to add more than one can of water to the pot. Next, mince two cloves of garlic and add them into the pot… it looks pretty right? Dice those tomatoes next and add them to the party. Finally add the cumin. DON’T ADD THE HONEY YET! Now, put the pot on the burner at medium high heat. Once it begins to simmer cover it and turn the heat to low. Let this cook and do it’s thing for 25¬†minutes or so. The longer you let it cook the more flavor there will be and the softer the beans will become, I like them very soft. Finally after its simmered for a while stir in your honey and cinnamon. I’m eating healthy…but if you aren’t throw in 2-4 tbsp of brown sugar to cut some of the spice. Now turn the burner off and let it sit covered for 10 or more minutes. Once you are ready to serve garnish with bacon, cilantro, and avocado.
