Twice Baked Patriot Potato Skins

Got a football game coming up? I made these for a Patriot’s Game and they made for the perfect game day appetizer!

Wash and pierce each potato with a fork. Use a 5 lb potato bag. Now salt the skin and throw in the oven at 425 for 50 minutes.


Now while the potatoes are in the oven, fry up a pound of bacon until it is nice and crispy. Let cool on a plate with a paper towel and try not to eat all of it. The potatoes need it! potato2

Let the potatoes cool then cut them in half and use a spoon or cookie scoop to scoop out the flesh like so.

In a stand mixer combine one stick of cream cheese, salt, pepper, 1 tsp paprika, 1 cup blue cheese chunks, a stick of melted butter, and potato flesh and mix until smooth.

Now, stuff the potatoes with this mixture. Use the same scoop and add double what you scooped out.

Sprinkle with paprika and 1/2 cup cheddar cheese. Stick back in the oven at 350 for 10 minutes.

Remember that bacon from earlier? Top with the bacon and serve hot! Enjoy!
